Find an airtight glass container and keep a couple of fresh eggs per person, make sure you close it tightly and leave it in the fridge for two days! PASTA WITH PORCINI FUNGHI AND TRUFFLE
We cook the pasta according to our custom, reserving some broth from the cooking of the pasta. Then in another casserole we fry chopped onion and garlic, and when the onion is ready we add the funghi, a moment later the broth that we have reserved from the cooking (little quantity) and we let it reduce.
Add the cream and the chopped black truffle, then mix the pasta in the casserole and grate a good Parmesan on top.
VEGETABLE CREAM WITH EGG AND TRUFFLE
Prepare a cream of vegetables with potato, zucchini, leek and carrot, poach them previously with a little butter, and let it cook for 25-30 minutes. Put water to boil with a stream of vinegar, place the eggs and leave them for about 4 minutes.
In a bowl serve the cream, then the egg, add a little truffle and pepper.
SIRLOIN STEAK WITH BLACK TRUFFLE
Grill the sirloin with a little oil. Once to taste add salt and pepper.
In the same frying pan, add wine and let it evaporate, then put meat stock and let it reduce, in this step we can add cooked potato to thicken. Then grate some truffle over the sauce and add butter.
Put the meat back in this sauce to heat and serv
